PBFI and PPIC to Host Dynamic Workshop “Field to Foodservice: Plant Protein Innovation that Performs At Scale”

The Plant Based Foods Institute (PBFI) is partnering with the University of Minnesota's Plant Protein Innovation Center (PPIC) for a dynamic workshop on May 21, 2026. Join us from 8:30-6pm for programming dedicated to building connections between research breakthroughs and the commercial kitchen. Taking place on the second day of PPIC’s 7th Annual Research Spotlight Meeting, "Field to Foodservice: Plant Protein Innovation that Performs At Scale" convenes researchers, ingredient innovators, food manufacturers, farmers, and foodservice leaders to explore how plant-protein advances can be translated into delicious products and menus that thrive in high-volume institutional settings.

PBFI's Executive Director Sanah Baig will deliver the opening keynote, exploring how plant-based foods can strengthen regional agricultural economies while meeting accelerating demand in schools, hospitals, and corporate campuses. Maddie Segal will guide a discussion with industry leaders on "Plant Protein Innovation in Action," showcasing how agricultural and processing breakthroughs are meeting large-scale foodservice needs.

The day is designed to foster cross-sectoral dialogue across interactive sessions, including a farm tour with UMN's Forever Green Initiative and a chef test kitchen demo, all focused on what it takes to achieve performance at scale, from sensory excellence and nutrition standards to reliable supply chains and cost considerations.

Attendees will gain insights into how deliberate coordination across the value chain – from breeding and processing to procurement – can strengthen regional agricultural economies and meet the accelerating demand for high-quality protein in schools, hospitals, corporate campuses and other growing markets.
